The most important thing is to cut out saturated fats. Simple, refined carbohydrates (in sugar, corn syrup, candy, baked pastries) can raise cholesterol while unrefined complex carbohydrates (in oatmeal, oat bran, apples, pears, and barley) can lower them. Other good foods to eat include flaxseed, walnuts, salmon, mackerel, nuts, seeds, and avocados.
