When mice were fed a low-carbohydrate/high-protein diet, their cholesterol levels did not increase, but they did have significantly more atherosclerosis (a build-up of plaque in the arteries). This occurred even though the mice did lose weight. A balanced diet is much healthier and more nutritious than simply eliminating an entire food group.
