This makes a great healthy, but flavorful, dinner. Serve with good quality cheese, like Comté, and sliced apples and pears. Comté is a popular French cheese--while you may not be able to find it in many chain grocery stores, any store that has a good cheese selection should carry it.
Ingredients
2 Tbs. olive oil
1 tsp. cayenne pepper
2 garlic cloves, sliced
Salt and ground pepper, to taste
1/2 large onion, chopped
2 cups peppers chopped (I use a combination of red, orange, and yellow)
1 garlic clove, minced
1/2 cup whole cashews
2 cups cooked brown rice
2 cups vegetable broth
1 Tbs. truffle oil*
*If you do not have truffle oil, you can substitute another Tbs. of olive oil. But use truffle oil if you have it--it has a wonderful, silky taste.
Instructions
- Cook rice according to instructions
- Heat oil in large skillet over low heat.
- Once oil is warm, add cayenne pepper, sliced garlic, and salt and pepper. Cook on low for 20 minutes.
- Remove garlic slices; reserve for later.
- Increase heat to medium. Once oil is heated, add peppers, onions, cashews, and minced garlic. Cook over medium heat for 10 minutes, or until onions and peppers are crisp/tender.
- Stir in rice, vegetable broth, and reserved garlic slices; decrease heat to low.
- Stir in truffle oil. Cover pan and cook on low for 10 minutes. Remove lid and cook longer if too much liquid remains in the pan.
