Taco seasoning mixes from grocery stores are filled with sodium and taste too much like fast food. Once you make your own seasoning mix, you probably won't go back to the grocery store version.
Turkey
Ingredients
1 1/4 lb. extra-lean ground turkey
1 Tbs. olive oil
2 Tbs. Worcestershire sauce
1 Tbs. mild chili powder*
2 Tbs. fresh cilantro (or 2 tsp. dried)*
Ground pepper, to taste
1/4 cup beer**
*While I prefer to use only these herbs/spices, there are other possibilities, depending on what you like. Other herbs/spices to consider: cumin, oregano, basil, cayenne pepper.
**Make it a good-quality Mexican beer, like Dos Equis (with lime, of course!): the leftovers go great with the tacos.
Toppings/Shells
Ingredients
Brown rice, cooked
Black beans (I use canned)
Bunch scallions, chopped
2 cups shredded lettuce
2 medium tomatoes, diced
Salsa
Low-fat sour cream or low-fat plain yogurt
Whole-wheat, low-fat tortillas
Crunchy blue corn taco shells
Instructions
- Cook rice according to instructions.
- Warm up black beans.
- Spray heavy skillet with pan spray.
- Place turkey in skillet over medium heat. Add olive oil, Worcestershire sauce, chili powder, cilantro, and ground pepper. Cook for 8 minutes, stirring occasionally.
- Increase heat to high. Once pan is heated to high, add beer (be careful, liquid may splatter). Cook on high for 2 minutes.
- Reduce heat to low, cover, and simmer for 10 minutes.
- Choose your shell and toppings.
