Ingredients
2 Tbs. olive oil, divided
2 medium onions, sliced
Coarse salt, to taste
3/4 cup dry red wine, such as Cabernet Sauvignon
1 1/4 pound ground bison (buffalo)
2 1/4 Tbs. shallots, chopped
1/3 tsp. coarse salt + more, to taste
Ground pepper
Hamburger buns
Extra sharp white cheddar cheese, sliced
Dijon or spicy brown mustard
Romaine lettuce
Instructions
- Heat 1 Tbs. oil in heavy skillet over medium-high heat. Add onions and salt, sauté until tender, stirring often, about 10 minutes.
- Carefully add wine, stir, and reduce heat to medium. Cover, and simmer for 10 minutes to caramelize onions.
- Preheat broiler.
- Mix meat with shallots and salt. Shape into 1/2 inch thick patties. Sprinkle with salt and pepper.
- Add other Tbs. oil to skillet on medium-high heat. Add burgers and cook until browned, about 3 minutes per side for medium-rare, or 5 minutes per side for medium. Add cheese slices during the last minute of cooking time and cover pan to melt cheese.
- Cut buns and place, cut side up, on baking sheet. Broil for 1 minute.
- Place burgers on buns, top with mustard and romaine.
