Ingredients
1 cup flour
1/4 cup almond flour/meal
1/4 finely chopped walnuts
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 1/4 cup low-fat milk
1/4 cup pure maple syrup
1 egg
Pan spray
Fresh berries
Instructions
- Combine flour, almond flour/meal, walnuts, baking powder, baking soda, and salt in a medium bowl.
- In separate medium bowl whisk together milk, syrup, and egg.
- Add milk mixture to dry ingredients and blend until just moist (do not over-blend).
- Spray skillet with pan spray and place over medium heat. Working in batches, add batter by 1/4 cupfuls. Cook until both sides are golden brown, about 2 minutes per side.
- Transfer pancakes to plate and top with berries.
