but tastes like it did, this Strawberry Spinach Salad with Poppy Seed
Vinaigrette fits the bill. This tasty salad requires only a few ingredients, is
super easy to make, and is healthy to boot--spinach is packed with protein and
strawberries are high in Vitamin C. For a more decadent taste, try substituting
candied walnuts for the slivered almonds and crumbled blue cheese for the feta
cheese. Add some grilled chicken breasts to make this a light and breezy
summertime meal.
Ingredients:
1 cup sliced strawberries
1 pound bagged, prewashed baby spinach
3 tablespoons slivered almonds
1/2 cup crumbled feta cheese
1 batch poppy seed vinaigrette dressing
For the dressing:
2 tablespoons poppy seeds
1/2 tsp salt
1/2 cup canola oil
1/3 cup honey
1/4 cup red wine vinegar
Whisk the poppy seeds, salt, canola oil, honey, and red wine vinegar
together.
Place spinach in a separate bowl. Drizzle on the dressing and toss well. Top
with strawberries, slivered almonds, and feta cheese and serve.
