Ingredients
3 large ripe bananas*
2 eggs, beaten
2 cups flour
3/4 cup granulated sugar
1 tsp. salt
1 tsp. baking soda
1/2 cup coarsely chopped walnuts
Brown sugar, for sprinkling
*I don't like them too ripe. If they're too brown, you can taste it in the bread.
Instructions
- Preheat oven to 350 degrees.
- Grease a loaf pan (use a stone loaf pan if you have one).
- In large bowl, mash together bananas and eggs.
- In medium bowl, mix together flour, granulated sugar, salt, and baking soda. Add this mixture to bananas/eggs.
- Blend in walnuts.
- Place the batter in the pan, sprinkle top with brown sugar, and bake for 1 hour, or until toothpick comes out clean.
